Foodie Friday: Improv Edition

The other night I improved. I’m not really much of an improv artist, I usually stick to recipes I know and modify to my taste or just stick to a recipe in full.

So the other night I was jonesing for mac and cheese. But soon realized that I didn’t have the Annie’s mac and cheese that I love oh so much (seriously, I can down a box of that on my OWN…) then i saw nacho chips…and maybe I wanted nachos. Seriously, when I don’t know what I’m craving to eat, I can be the most indecisive person EVER. Especially when I don’t have a menu.

So a friend of mine suggested I make my own mac and cheese.

So I quickly looked up recipes and was like, cheese? milk? butter? noodles? I’ve got all that. I kind of hemmed and hawed for a minute but then cooked it up.

Noodles.
~1 c. 4 cheese mexican blend
1 c. almond milk
3 T butter
~1 c. mozzarella cheese
2 dashes of parmesan cheese
1 c. frozen organic broccoli

cook pasta as directed, add frozen (or fresh broccoli) when pasta is close to done to blanche for about 2 minutes or until cooked. Melt butter in separate sauce pan with almond milk (or skim) when melted, add cheese and melt cheese until soupy. When pasta is cooked, drain and return to pot. Stir well to mix broccoli in. (set some pasta aside if you want – I did to use here) Add cheese and mix well. May be stringy (depending on what type of cheese you use. I used what I had. Would have preferred cheddar though…). Added salsa to top and wham bam thank you ma’am – it’s like a macaroni and cheese nacho plate without the chips.

All in all? A tasty, quick, improvised meal. I’m less and less afraid of improving :) And I’m looking forward to more foodie friday posts for you all!

Last Single Girl Meal

I’ve become the master of cooking for one. Much better than my former single girl days when I would often be known for eating ice cream out of a carton a few spoonfuls at a time, cooking mac and cheese, quesadillas, nachos or cereal. I pretty much lived off the worst (most common collegiate..) foods until well into my days in DC. Thankfully by that point it wasn’t that I was so much of broke (well kind of) but more lazy. That’s always been my issue with cooking. If it weren’t for the food court in the mall near my old pre-husband apartment, I’m pretty sure I would have starved out of sheer laziness to cook. That wasn’t always the case…but often.

The other night I cooked a meal and had left over pasta and put some aside that wasn’t mixed in with my mac and cheese (scheduled post coming up about that on Friday!) that I improvised with what I had (what I really wanted? Was Annie’s mac and cheese…with broccoli. but I didn’t have any and was too lazy to drive over to the store).

So last night after I got home from work and running errands, I cooked up my last meal as a pseudo single girl.

1 1/2 c. whole wheat pasta (I used bowties)
1/2 c. organic vodka sauce
1 apple chicken sausage link
dash of parm

Was the perfect proportion. Filling. Rather healthy for the most part and one of my all time favorite meals. When I was younger, my mom would cook spaghetti with sausage and my sister and I would dig the leftover sausage out of the pan eating just that instead of heating up a full plate. The next person to eat leftovers would be all like WTF M8! I’m pretty sure that my love of sweet italian sausage (TWSS! TWSS!!!! There I beat you all to it) is what’s keeping me from being a vegetarian. Womp womp.

Anyhow, so this meal is a far healthier cry from my former single girl days. But now that I’ve finally ah-hem, mastered the art of cooking for one? Hubs is comin’ home! Thankfully I’ll take my skillz I learned (ah-hem portion control?! How else did I lose 18+ lbs? Meal planning, and thensome) and take them to the bank and by bank I mean my kitchen. Hubs and I are excited about being more active together and participating in more races as a couple rather than him being on the sidelines.

Since I’m in Texas for the two days, and have no workouts to report of but Hubs and I are running an impromptu 5k on Saturday which should be fun. Not sure I’ll hit my PR but I’m still going to go for sub 30 minutes! In the meantime…kittehs are going to hold down the fort.

What I wore Wednesday: Spring In My Step

I have a spring in my step. Tomorrow I head to Texas to retrieve my husband from 7 long months of training.

Don’t mind the crap on my floor.

The skirt and the shirt were both bought with my weekend shopping excursion last weekend up to Arundel Mills. I’m a JCrew addict. What of it?

I need to find another race. I’m itching to get back to running but without a race to train for, I have a very difficult time motivating myself. I did however, go to yoga this morning and that was some sweaty awesomeness at Prana.  I’m leaning towards the Dover AFB 1/2 marathon in June. It’s a flat course, it’s inexpensive and not too far away. Hubs MAY have another commitment that weekend so we’ll see how it all works out. I haven’t registered yet.

Also…the final weigh in:

I still have about 15 lbs to go til my goal weight but I’m still immensely proud of accomplishing this massive weight loss among other things since hubs left in October.

On the fun side, along with Annapolis Cup this weekend, Adam and I are running our first 5k together, I’m attending the Tiger Trot 5k at a local elementary school for work and thought it would be fun to run it as well. When I mentioned it, he told me to sign him up as well! Fun!

What I’ve learned

Hubs left just about 7 months ago. The first few weeks were a daze of tears and learning to cope. Learning to be on my own.

You see, I had always had roommates.

In college. At the ripe age of 21.

{These are two of my favorite roommates in college (I had a lot of crappy room/suite mates) before a night out.}

 …then after college.
My roommates were pretty cool. And we partied. A lot.

Then we got a new roommate. He was cool. Again, we partied. A lot.

Then I met Adam. And spent a lot less time at the house. And eventually moved out…

And moved to Capitol Hill with him. Then we got hitched.

My point is, I never lived on my own. I never had to do everything for myself. Whether I had suitemates/roommates in college (which lets be honest, doesn’t really count), housemates after college or was cohabiting, I always had someone around.

Which was why it was huge for me when hubs left for basic and then AIT. Huge and devastatingly scary for me. You see, hubs and I have a great partnership and where he lacks, I pick up the slack (cleaning, being organized, taking care of the cats…) and vice versa (keeping our finances somewhat organized, paying bills, taking care of the car and stuff like that…). Not to mention, I had a huge anxiety of driving when he left. I halted my social life in DC to a certain extent for a short period of time because I was frightened by the thought of driving on Route 50 to New Carrolton during rush hour. Pretty sure the first time I did I had an anxiety attack as I was merging into the exit lane where I-495 intersects with Route 50. But I survived.

I eventually got over that fear (I had to). I got everything that was out of order when he left back in order (mostly) and found new things to keep myself focused. I threw myself into the Junior League. I PR’ed in a couple of races. I made new friends, networked and even found a new job with a much more ideal commute. Because if there was one thing that drained me the most while he was gone? Working 10-12 hour days (mandatory over time was kind of bullshit if you ask me), with a 1.5 hour commute each way? I had no time to work out. I ran a lot late night downtown, in the dark which was just asking for trouble and I was exhausted all the time.  It was in an essence, no bueno.

Before I was nervous about…

…driving. Anywhere really. Now? I just have a lot of road rage…

Managing the husbands finances. Mine have always been a bit straight forward. But he took care of his credit cards and the utilities. Now? I’ll keep doing this thankyouverymuch.

…Being lonely. Now? I like my time on the couch watching trashy tv. Also, you can thank the past 7 months for my new found addiction of the Kardashian’s on E! (Don’t judge…)

Also, I now know that when/if he gets deployed for a longer period of time, I will be okay. Will it be easy? Likely not. But I’m prepared. I have a massive support system around me of family and friends who have been nothing short of amazing and oh so supportive but I built this. Adam made a comment the other day about how when we lived in Connecticut he had the friends and family and I was kind of lost. Now, the roles have reversed. He hasn’t really had the opportunity to make those friendships and relationships but as a partnership, I’m looking forward to him fitting in with the ones I’ve made. And I know he’ll make his own. And we’ll find our place here in the Annapolis community, it’ll happen. But it’ll take time and having him back home with me starting on Saturday is going to be an adjustment.

But I for one can’t wait and I can’t wait for the new chapter to begin and see where this new life in the military takes us. Because as much as I learned about myself and sometimes enjoyed living on my own? I wouldn’t trade having my husband home with me for anything.

The Last Week…

It’s my last three days as a pseudo single gal. Huzzah!!! Seven months of being alone…and I survived!!! I’ll post more on that before Wednesday because holy crap y’all…I’ve definitely learned a lot about myself and about hubs and I. The strength of love is a wondrous thing when it boils right down to it.

I’ve got a lot to do before o’dark thirty on Thursday when I head to BWI to fly to San Antonio to bring my husband HOME. HOME FRIENDS! He’s coming home :)

First…a weekend recap.

It was a productive weekend…ish. Starting with the Junior League Gala friday night. The event was tons of fun, featured some amazing chefs (it was “Moonlight Masquerade, a Chefs by the Bay event”) and was an overall amazing and beautiful night – so many kudos to our Gala committee who did an awesome job with the event. I for one, can’t wait til next year!

My fabulous dates including Sarah Jane (left also my committee chair), Jason and Anne Marie.

After the event, we brought the party downstairs to Pussers. My friends through Junior League are all so amazing. So much love for all the gals I’ve met through this amazing organization.

Then I ran into my pal Sarah in the bathroom!

I spent yesterday recovering, I am so not used to 2a mornings anymore. At all. But that’s cool cause sometimes you need a day to catch up with your Tivo. Which is precisely what I did until about 2pm.

When I finally peeled myself off the couch and made myself presentable, I went shopping and got two cute dresses from H&M and the hubs some new shorts (that fit!) for next weekend when he gets home – he really wanted a new pair of Nantucket Reds so I popped up to the Arundel Mills outlets and hit up the JCrew Outlet (since they were like half the price there that they were at the regular JCrew here in Annapolis)

One of the two dresses i bought at H&M, is it just me or is H&M totally taking inspiration from Kate Middleton’s closet lately?

I finally satisfied a craving I’ve had for sushi lately…

Philadelphia rolls and salmon rolls are my favorites.

I didn’t really get any workouts in this weekend (whoops?) but I ate, for the most part, half way decently. Except for the soda and popcorn I had at the movies today when Sarah and I went to see Titanic in 3-D. Whoops?

This week…

I think I need to sign up for another big race soon. I’m feeling a little sedentary and without training for something I lose focus super easily and fall back into bad habits. read: this weekend.

Monday: Hot yoga in the AM
Tuesday: Fleet Feet run club 3-5 miles
Wednesday: hot yoga in the AM
Thursday: TEXAS!!!
Friday: Texas!!!!!
Saturday: Running with the hubs before Annapolis Cup :)

I’m totally on a hot yoga kick lately, unfortunately, my wallet will not allow me to be on a hot yoga kick forever so I’ve really gotta get back into running. I think with the hubs back next week, it’ll be much easier since we’re both super excited about staying in shape together. I mean, I like working out alone to some extent but it also gets kind of lonely not gonna lie.

Weighing In

It’s the last week of the hubs and I’s “challenge”. He’ll be home before my next weigh in post (unless I decide to do one on Wednesday before I head to San Antonio).

I didn’t run at all this week. I just…didn’t feel like it. Hot yoga was good though. Really good actually. I’m planning on hitting it up again at least once before San Antonio. Morning hot yoga has won a place in my heart… if i tell myself repeatedly that I will get up at 6a and leave my house by 6:20a.  It’s doable. Even for me who is sometimes the slowest person ever at getting ready for work in the morning.  I’ve accepted I’m likely not going to hit my 75 mile goal this month but I’m okay with that. I PR’ed in two races and I feel really good about that. Ultimately, that’s all that matters.

Weigh in week: I lost count but the LAST ONE 

Also, I’ll make sure hubs posts a follow up to his part 1 post on his lifestyle changes so you can see the whole story (and what I was competing with ;) )

I’ve still got about 10-15 lbs to go before goal but I’m getting quite comfortable with my body where as before I felt incredibly subconscious. I’ll do some before and after pictures next week because the difference is kind of huge. Who knew what a difference 20 lbs made on a 5’2″ frame.

Best meal this week? The tofu stir fry with soba noodles I made the other night. And then had for lunch. NOMS.

Flashback Friday? 

I wanted to throw in something random here but last night upon going through one of my boxes of photos (oh em gee, there are so many!) I stumbled upon more old skool pictures – including this one. This was my room when we lived in Naugatuck, CT (just down the road from where Adam grew up!) while my sister was a “normal” female and had a Barbie mansion and posters of NKOTB and Tiffany and Debbie Gibson…I had…Bon Jovi. I was too cool for school. (and I don’t mean normal in the literal sense. I just mean she was more “pop” like and me? I was all rock and roll even at an early age.

Bon Jovi, FYI, is still on my list of concerts I am dying to see in my lifetime. Him, Jimmy Buffett, Journey, Taylor Swift and Bruce Springsteen. Yes I know, I don’t know how Taylor Swift ended up on there but I think one of her concerts would be a lot of fun. The inner teeny bopper in me is just dying to have her as one of my BFF’s okay?

30 before 30: Scrapbooking

It’s on my 30 before 30 list to make a scrapbook of my 20′s. It was one of those things on my list of things to do while the hubs was gone – along with decorate the bedroom (done-ish), redo the living room (ish…), and figure out what the eff to do with our spare room. Last night, I organized. I got rid of 2 boxes that were still packed in the closet then reorganized said spare room closet and cleaned up the floor putting aside a bunch of crap hubs needs to sort through when he gets home. There’s still work to be done but I can walk in there without tripping over crap so progress!

But that was just the cake. I also went and bought a photo album, so I could hopefully get that scrapbook started and finished before next week when I go to Texas.

This is just high school.

I have at least 3 more boxes. Most of the pictures I had put on CD as well (when I got my disposable cameras developed….because I used disposable cameras through college because I had cheap digital cameras that didn’t last…or that i broke.) so I plan on saving those but I want to downgrade and get rid of the photo boxes. Most of the pictures I have are from 2003-2006. Yikes.

Let me tell you…or rather.. let me show you some gems I stumbled upon. Do not judge…everyone had bad hair in the 90′s. Also, please note the songs that popped into my head as I was going through these photos.

Holy effing crap y’all I was so little!!

My 30 before 30 list states a scrapbook of my 20′s but I really didn’t have many pictures from high school (it wasn’t a good time for me…) so I went through the few pictures I had from 1997-2001 and am going to add them to the photo album my mom gave me that was technically my baby album but still had some room in it. Next time I’m in VT I really need to get more pictures from my childhood from my mom to add to that one and I may go back to Target to get another album this weekend to transfer the baby album over since the cover fell off in one of my many moves (pretty sure it was from DC-CT or Ellie got to it…).

Either way, since it’s supposed to be a rainy weekend I figure this is a nice project that’ll be productive, keep me busy and inside and you all might be getting throwback pictures for a while now on the blog. Enjoy!

What I Wore Wednesday

I was going to go to yoga this morning.

I really need to stop contemplating in the morning what I want to do. My alarm went off at 530a because I like to snooze so I have to set it for 30-60 minutes before I need to be out of bed. Thought about yoga but then decided I’d go for a run. Thought about swimming after work and then snoozed til 7a. Didn’t get my swim gear together in time so I’m going to go for a run after work. But was enjoying the thought of “hey, it was so nice just coming home…” yesterday that I over contemplated yoga or running this morning and did neither. Whoops.

I’ve been sticking with my 100 pushups challenge and week 1 is done! (Why does it only have you do 3 days? Whoops. I’ll stick with trying to do 3 sets of 6 for the rest of the week or repeat week 1)  and today I did a 45 second plank. I’m building my way up to a 5 minute plank. It could take a while though, 45 seconds was tough yo.

Tonight: 4.5 mile run
Tomorrow: 3-5 mile run with lulu run club
Friday: rest/Gala :)
Saturday: 5-8 mile run

Total mileage: need 15-20 miles this week to make 75 miles by 4/30 :)

Post Race Workouts

Now that my race is over, I decided to take a couple days off. My IT bands really needed the rest mostly.

This week’s workouts

Mon - rest
Tues – yoga (AM)
Wed – short run 3-4 miles
Thurs  - run with lululemon group 3-5 miles
FriJLA Gala (off)
Sat – run 5-8 miles
Sun – yoga

After all, just cause the race is over doesn’t mean I’ve reached my over all weight loss goals.  And I still want to hit 75 miles in the month of April and I’m at 44 so I have roughly 30 to go – this means I need to hit about 15 miles a week for the next two weeks which could be tough with my trip to San Antonio next week to retrieve the husband. However, now I’m eager to find my NEXT half marathon so I can hit that 2:00:00 mark!

Additionally, I started the 100 pushup challenge yesterday. Granted the pushups I did were on my knees because I have NO arm strength – but I did do about 15 of them not on my knees! So go me?  Add to that a 30 second plank (#plankaday) I am determined to tone my core which will not only look smashing in my summer garb, but also we all know a strong core helps running. Win win no?

Race Recap: VT Unplugged Half

Ya’ll… I PR’ed again. I’m so excited and pumped and proud! I worked so hard and trained so much better than previous races and oh em gee…it showed. Who woulda thunk that if you train well (and put over 100 miles into training)

It was a tough one but with every race – PR or no, you learn something right? Right. I’ll get to that after.

So this weekend was half marathon #4 – VT Unplugged Half. The race started at 9a. I had gone to bed the night before around 11 and woke up at 7 so I was fully rested and ready to go. I had shot blocks with me, a small water bottle, and my ipod all queued up. Then we were off. The first 2 miles were an out and back loop – the back part was on a gravel bike path which I did not like so much.

Then it was onto the bike path along the lake the whole way down.

 How beautiful is that?! Seriously. That’s where I grew up friends.  This picture may in fact get framed and put up on the wall in our living room.

At mile 11 I hit my wall. I feared I would. My longest run was 10 miles – which I hit around 1:40:00 and I knew I could do a sub 30 5k but my legs just became lead. Up until that point I was keep sub 10:00/miles (the one time i had to stop to tie my shoe around mile 5 effed up my splits)

I really wanted to hit sub 2:15:00 and it would have been doable but around mile 11 I had to stop again to tie my shoe and I also did a couple run/walk intervals to help ease the pain in my IT bands.

Super stoked about my new PR!

After the race the afternoon consisted of two of my absolute favorite things…

cake and wine.

My sister and I had purchased a LivingSocial deal to Shelburne Winery a while ago and it did not disappoint. Most of the wines were  a bit too acidic for my liking but a couple were tasty – I didn’t buy any bottles since I knew they wouldn’t travel well (based on previous experience traveling with glass bottles of booze) but next time Hubs and I drive up we’ll definitely be stopping there!

Lessons learned from this half:

1. Long runs matter – Next time I want to ramp up my long runs to 12-13 miles. I had intended on doing this but time got away from me with the trip to CT.

2. FUEL – I fueled well and got a great nights rest the night before. It really helped my mentality on Saturday AM.

3. Don’t underestimate the taper – I think i over-tapered this week. I had intended on getting in a yoga class and a couple runs but just didn’t have the time. I ran once on Tuesday and that was it.

4. Pacing counts! I had been pacing myself to run sub 10 minute miles and for the most part it worked out quite well. That was the pace I had run most of my runs at and I really think with a bit more hard work I can get my pace into the 8:00 min/mile range and hit a sub 2:00:00 half in December in Annapolis.
