Foodie Friday

I’ve mentioned a little bit about my healthy(ier) eating since hubs has been gone. Better portions and cleaner eating in general. I’ve been pretty impressed with myself. Here’s my typical menu – because I’m a creature of habit, I tend to eat the same thing. Over. and over. and over again.

Breakfast
oatmeal (1 packet of instant – because they have it at work for freesies)
or
8 oz protein shake
or
whole wheat frozen organic waffles with banana and peanut butter

Lunch
spinach salad with nuts/dried cranberries/goat cheese/tomatoes and whatever else i feel like putting in there
or
any sort of “left overs” if i feel like making a larger meal that will last all week
or
rice, beans, salsa, guac and a dash of cheese
or (and this may be my new fave)
cubed sweet potatoes, black beans and salsa. NOM.

Dinner

salad (see above)
or
sweet potatoes (see above)
or
some sort of frozen bagged pasta from trader joes (because omg I’m so lazy!!)
or
quesadillas or a small (measured) plate of nachos

Not the healthiest options for dinner but I get home late. I don’t want to cook a huge meal for just myself. So I’ve been leaning on quick meals that are easy peasy to cook.

Today’s (new feature that I thought of last night)is Foodie Friday where I share a simple, (mostly) healthy meal that’s good for one (or two…). Mostly because I understand that as a healthy living blogger, so many of them show off what they eat. I’m not the type that’s going to photograph pictures of myself eating with a freakin’ spoon in my mouth or of every morsel I put in my mouth. But I have a good few dozen photos that hubs and I have taken of amazing food we’ve eaten at restaurants and cooked. So Foodie Friday is going to be my new feature to share my cooking/baking/healthy eating! I mean really, no one wants to see pictures of me putting food in my mouth (yes. I’ve seen bloggers who do that! Gross right?)…even I don’t want to see that. Soo let’s make something better of it that is manageable.

Chicken and Cheese Quesalladas {yes I made that up}
(serves 1)
4 oz of chicken
1/4 low fat mexican shredded cheese
whole wheat tortillas
3 T enchillada sauce
1/4c. black beans
dollop (or a large dollop if you’re like me) low fat/non fat sour cream

Cook quesadilla normally (with fry pan – i used two tortillas but you could use one and fold it in half
cook chicken in strips (i like the precooked chicken from Trader Joes that you just heat up in the microwave.)
Heat black beans
plate quesadilla, chicken, top with enchillada sauce and sour cream (do this when you realize you’re out of regular chunky salsa and guacamole)

{Be Thankful Challenge}
Today I’m thankful for the kittehs. Because it’s so nice to not have to come home to an empty house :) Even if they sit on top of my forearms when I blog. And purr like little lawnmowers. and nuzzle when I don’t necessarily want to be nuzzled. But they’re cute and I lurrrve them.

    I hadn’t thought of sweet potatoes, black beans and salsa, but I bet that would be a delicious and healthy lunch!  Thanks for the suggestion!

    fave healthy meal=organic butternut squash soup (from TJ’s) with croutons, soy bacon bits, and scallions, with a piece of ciabatta or sourdough for dipping. We also add a tsb of sour cream to the soup so it’s thicker.
